My 3 Healthy Favorites!

Hello there friends!

So I’ve decided to do something that I haven’t done in ages and that’s sharing healthy food. Say WHAT? If you know anything about me, you know that I am all about the sugar. Cookies, cake, chocolate. All of the yummy things. Changing my eating habits is almost like mission impossible. Key word: almost. I’m trying day-by-day to make small changes that months from now will be BIG changes. I can’t say I eat 3 balanced meals a day, but I can say that I’ve been eating healthier meals and snacks.

And you know that I am the queen bee of picky eaters. So if I like these 3 things, I’m sure you will, too.

Peanut butter and banana on toast

I hope I got you to sing Gwen Stefani there for a second. This all time favorite breakfast dish combines 3 of my favorite things: Peanut butter, banana, and bread. I love bread! I toast whole grain bread for about 5 minutes, then spread peanut butter on it, and top it off with sliced banana. You can always opt for gluten-free bread or rye bread if you prefer. I wouldn’t use potato bread since that defeats the purpose of this meal, (but you do you)! You can even go a bit healthier by using almond butter which to be honest, I should have done. But I made up for it with the fruit. I’ve also made this toast with apple slices. To make this meal more filling, have it with a cup of yogurt.

Celery and peanut butter

I hope this photo provides proof that I do eat vegetables. And celery is actually one of my favorites! Broccoli is too, but don’t tell anyone. I love to eat raw vegetables whenever I get myself on the health kick. I’m hoping that by blogging these things I eat healthier. For this, I washed and cut up about 4 stalks of celery and then added a nice spoonful of peanut butter. Again, you can even eat this with apple butter.

Apples and peanut butter are another favorite of mine.

Chocolate chip pancake bites

Okay, before you question me under the investigation light, let me explain… I made this with the heart healthy Biqsuick recipe as opposed to “regular Bisquick”.

Here is what went down. You can also refer to my Instagram post.

Preheat the oven to 350 degrees and fill your cupcake pan with liners. I don’t recommend using non-stick spray. Liners are a no-fail.

I made the mix as the box instructed and once I poured batter into the cups, I added a few chocolate chips into each cup. Then, I baked them for 12 to 15 minutes. Just do the ‘ole toothpick trick and once they’re good, let them cool for about 2 minutes. Some recipes I read online said to add maple syrup which sounds delicious, but we don’t have any in our pantry. You could also probably add honey if you want, or cinnamon. I added a nice splash of vanilla. SO good! Feel free to substitute the chocolate chips with blueberries, too!
